Susie's Tortilla Soup
Susie’s Tortilla Soup
For two servings, place the following ingredients divided evenly into two bowls:
• two corn tortillas, cut into small strips and pan fried in small amount of
oil until crisp ( or substitute two handfuls of crushed tortilla chips )
• one avocado, cut into small pieces
• one roma tomato, chopped into small pieces
• 2 tablespoons finely chopped onion
• 4 tablespoons sour cream ( or Mexican crema )
• 1/2 cup grated jack or cheddar cheese
• 4 tablespoons finely chopped fresh cilantro
• the juice from one small lime ( key lime or Mexican limon )
• OPTIONAL: small amount of chopped fresh peppers
• OPTIONAL: small amount of chopped fried pork rinds
Then prepare one can of Campbells Caldo de Sopa Tortilla ( you can only buy
this in a Mexican supermarket ) as per the directions on the can ( which is the
same as most condensed soups – one cap of soup and one can of water) and
heat until simmering. For a heartier soup, add a little cooked or canned chicken.
Pour the hot tortilla soup broth over the chopped ingredients and serve. Add
additional lime juice on the top to taste. Great served with warm flour tortillas.
Add more of individual ingredients or less, to your personal taste.
